– Here’s another healthy recipe suggested by our Nurse Practitioner, Kathryn Trojan.

Springtime Veggie Soup

Springtime Veggie SoupIngredients:

2 tablespoons – oil of choice (olive, avocado, etc.)

Garlic (measure with your heart)

Vegetables (about a ½ cup of each)

  • Celery (chopped)
  • Carrots (chopped)
  • Onions (chopped)
  • Zucchini (sliced)
  • Squash (sliced)
  • Green beans (cut into thirds)
  • Spinach
  • Potatoes (diced)
  • Parsley

One can cannellini beans

One can garbanzo beans

One can diced tomatoes

One can tomato sauce

 

Seasonings:

  • 2 teaspoons Italian seasoning
  • 2 teaspoons salt and pepper to taste
  • 32 oz. of chicken or vegetable broth

 

Cooking instructions:

Times may vary if you’re using a croc pot (4-6 hours), instapot (15 minutes), or stovetop (30 minutes to 4 hours).

1. Heat oil, add onion, celery, carrots, and garlic and sauté until onions are softened.

2. Add chicken broth, vegetables (except spinach), tomatoes, tomato sauce, beans, and seasonings and bring to a boil.

3. 15 minutes before you’re going to eat, add your spinach.

4. Enjoy!
